Vin de Pays d’Oc
Grape varieties: Cabernet-Sauvignon 60%, Merlot 25%, Carignan 15%
Alcohol content: 13,5 %
Surface: 2 ha
Productivity: 25 hl/ha
Harvest: manually in picking crates
Vinification: The berries are de-stemmed, and are put in thermo regulated concrete tanks through gravity. Daily we punch off the cap manually and pneumatically in order to extract the aromas and polyphenols softly. The wines of the different grape varieties are made separately. This wine does not contain added sulfites.
Tasting: A bouquet dominated by olive and black chocolate. In the mouth, these aromas are combined with a fresh red-cherry taste which is characteristic of this vintage.
Serving temperature: 16 – 18° C
Ideal partner for: duck, lamb, game and grilled meat, oriental cuisine and spicy dishes.
