BOIS DU ROI 2016
Red
AOP Languedoc
Grape Variety: Syrah 40%, Grenache 30%, Mourvèdre 30%,
Alcohol Content: 15 %
Surface: 2 ha
Productivity: 25 hl/ha
Harvest: Manually in picking in crates
Vinification: Unlike its older brother Le Château, Bois du Roi is produced from younger vines. It nonetheless benefits from the same meticulous treatment as the prestigious “tête de cuvée”, with just one difference – the length of maceration, which lasts 20 days on average. The grapes are de-stemmed. Daily punch-down of the cap allows gentle extraction of the aromatic compounds and polyphenols. Each variety is vinified separately in concrete tanks.
Tasting: A bouquet of strawberry and kirsch-cherry aromas that persists in the mouth, associated with thyme and peppermint flavors and a sublime end-note of violet. We find the supple, silky
tannins that characterize the Bois du Roi cuvée.
Serving Temperature: 16 – 18° C
Accompanies: Ideal partner for: rib of beef, duck, mature cheeses and grilled monkfish tails
